Hotel Okura Amsterdam’s Teppanyaki Restaurant Sazanka presents its own reference work: Sazanka – Refined Teppanyaki Cuisine, by Chef Masashi Nonaka. In it, twenty Japanese grilled dishes are clearly explained and illustrated step by step. The history of Teppanyaki cooking is also discussed extensively, as well as the latest trends, products and materials. Stichting Kunstboek is the publisher of this culinary book. In the book, Mr Nonaka and his team demonstrate that their exquisite cooking is a far cry from the ‘show-and-throw’ spectacle often associated with teppanyaki cuisine. Fish, meat and vegetarian dishes, side dishes and desserts are presented with the special Sazanka touch, that is to say teppanyaki of gastronomic allure, in which the quality of the ingredients is of central importance. The book’s text was written by Rodney Bolt, Masashi Nonaka and Kasia Cwiertka. Stephane Verheye and Olivier Chenoix provided the photographs.
